Er wird im Herbst ausgest, im Frhjahr mit Hacke und Striegel gepflegt und im Sommer schonend geerntet. Die Dinkelsorten, die wir fr dieses Mehl verwenden, sind alte, regionale Sorten wie z. B. die Sorte Oberkulmer. Unser Dinkel wird nach der Ernte entspelzt und gereinigt. Anschlieend wird er in der Stelzenmhle in Eggmannsried
